Holiday Dips
4-Onion Dip
1 cup yellow onions (chopped)
1 cup red onions ( chopped)
1 cup shallots (chopped)
½ cup chives (chopped)
3 cups sour cream
½ beef base
2 Tbls. granulated garlic
2 Tbls. Worcestershire sauce
1 Tbls.onion powder
salt and pepper to taste
- Combine
all of the above in a bowl and mix well.
- serve
cold with your favorite chips.
Chicken Fundito Dip
16 oz. Grilled chicken breast
32 oz. heavy cream
16 oz. Jalapeño jack cheese
½ cup shallots (chopped)
4 cloves garlic (chopped)
1 Tbls. olive oil
2 tsp. cumin
1 tsp. Mexican oregano
½ cup cilantro (chopped)
1 cup roasted red peppers (chopped)
salt and pepper to taste
- Sauté
the shallots, garlic, peppers in olive oil for 2 min.
- Add
oregano, chicken, cumin and sauté for 1 min.
- Add
cream and simmer for 10 min.
- Add
cheese and wisk into sauce
- Add
cilantro and allow to thicken.
- Serve
with tortilla chips
