Pan seared Chicken Breast with Swiss Chard, Topped with Tomato Fresca and Accompanied by a Vegetable Tower

Chef Eddie Matney 

Ingredients 

4- 6oz. Boneless, skinless chicken breast

1 tsp. olive oil

1 tsp. granulated garlic

Salt and pepper to taste 

Swiss chard

½ cup sliced red onion

1 tsp. chopped garlic

3 cups chopped Swiss chard

1 Tbsp Balsamic Vinegar 

Procedure 

1. Heat 2 tsp. Olive oil in a pan and sear chicken breast for

4 minutes on one side.

Flip breast and cover for 5 minutes.

2. Remove chicken breast and add onions and garlic to pan. Sauté for 2 minutes and add Swiss chard to pan.

Wilt chard for 1 minute and add balsamic, salt and pepper.

3. Place chard on plate and top with chicken breast. 

Tomato Fresca 

Ingredients

1 Tomato, diced

1 Tbsp diced red onion

1/4 tsp. diced Serrano chili

1 Tbsp chopped basil

1 tsp. olive oil

Juice from 1 orange

Salt and pepper to taste 

Procedure 

1. Combine all of the above Tomato Fresca ingredients in a bowl and mix well.

2. Top chicken breast with fresca. 

Vegetable Tower 

Ingredients 

1 Zucchini, sliced

1 yellow squash, sliced

1 red bell pepper quartered

1 tsp. olive oil

2 tsp. Balsamic vinegar 

Procedure 

1. Combine all of the above Vegetable Tower ingredients in a bowl and mix well.

2. Season with salt and pepper.

3. Grill for 3 minutes on each side.

4. Stack vegetables on top of each other making a tower.

5.  Top with your favorite cheese and bake for 4 minutes..

6. Place tower as a side dish on your plate.


Schreiner’s Chicken Sausage Pasta 

1# Chicken Sausage

2 cloves Garlic (sliced)

¼ Red Onion (sliced)

2 cups Tomatoes (chopped)

½ cup Fresh Basil (chopped)

½ # Butter

16oz. Tomato Sauce

1# Rigatoni Pasta (cooked)

¼ # Parmesan cheese 

1)      Sauté Onions, Garlic, Sausage in Butter for 5 minutes.

2)      Add Tomatoes, Basil and Sauce, simmer for 10 minutes.

3)      Add cooked Pasta, and season with Salt and Pepper

4)      Place in a bowl and grate Cheese over the top.

5)      NOTE; if you would like to add a vegetable, do so at procedure # 2.

6)      ENJOY!!!!!
