Barcelona Southwest House Salad
3 Romaine Lettuce Hearts (sliced 1 inch
long)
1 cup Roasted Corn Kernels
½ cup Parmesan Cheese
Croutons 4 slices white bread
Southwestern Dressing
Method of Preparation:
Clean and cut romaine hearts. Roast (grill) and remove corn
from ear. Cut bread slices into small pieces, brush with butter and
toast in oven. Set all ingredients to the side.

2 cups Mayonnaise
½ cup Rice Vinegar
1 tbl Brown Sugar
¼ cup Soy Sauce
¼ cup Chipolte en Adobo
Salt and Pepper to taste
Method of Preparation:
Toss
all ingredients together in a bowl then dress salad. Garnish on top with
Parmesan cheese.
